Homemade Tortillas mmmmMMMM Good

 Have  you ever eaten a homemade tortilla? If not I highly recommend that you do. Because once you have tried one you will never go back. And, these words were uttered to me prior to my first bite into one. I must admit I was fairly skeptical. It's a tortilla, how great can it be? It goes beyond your expectations. And when you go back and buy your favorite brand you will soon taste the difference.

This recepie came from my Goddess of a Cook friend for life Patty [from "Team Beer Pike]. She started blogging but has left us high and dry without any inspiration since November. You can find her here. Patty cooks and bakes with the skill of Professional Ballerina. I only help when asked and I stand aside in my spot when I'm in the way. All the while telling me exactly what she is doing, how she sliced, mashed, diced, cubed, chopped, baked, demi-glazed, fried, coated and served that particular dish. Sometimes I will look at a dish and think, no way, to complicated for me. I just can't seem to caramelize those onions just right. This endeavor of making tortillas was just like that. Although it looked simple enough the work involved was a little tricky for me. And she sensed that as she does often with me. This is when I get the look. "Renee this is SIMPLE. Juszdoit. Doit. 

So I did - Once. And it was just a hair shy of an epic failure. I'm a fan of cooking with Cast Iron. Patty is a fan of Non-Stick or "The Wrist Breaker" skillit. I purchased much to my dissatisfaction a non-stick skillit to produce the amazing homemade tortilla. They were to thick - I couldn't get the temperature right and burned the pan and the tortillas. And my frustration level went through the roof. However, since we had these little delights and because I was lacking the self esteem to make them again we have only had taco's once. Because the store bought tortillas were so nasty I couldn't stomach them. However! recently I passed my fears and went head on into making them. Here is the recepie I used.

3 Cups Flour
2 tsp Baking Powder
2 tsp Salt
6 tbs of shortening
1 cup of water [it called for 1 1/4 cup so add as needed]

Mix all dry ingredients then add shortening. Once blended add water. I used my mixer but you can do this by hand. I took it out of the bowl and kneaded it for a few. Once you have the mixture into a doughy substance [not sticky] divide into 12 [roughly equal pieces]. Roll them into a ball and flour. You will need a tortilla press or something to flatten the ball.
I can't tell you the exact temperature for your stove top. But it should be hot enough to brown up quickly but not burn. Picture what a tortilla looks like and make that.  They litterally take seconds to cook so be sure your assembly line is set up! Ball - Press - Roll - Cook!


This is almost when you need to flip!! Enjoy! You can also use wheat flour if you do not want to use white.
