The Panini Files

Yesterday was a very difficult day for me. I'm fighting a cold and other things and I felt very overwhelmed by everything. Work stress, economy, accounts. I just felt buried by it all. But the day improved with much success and here is why:

Geoff and I have a facination with inventing the perfect sandwich. So much so that he refers to himself as "The Sandwhich King". He accidentially referred to himself as "The Sausage King" which threw me into fits of laughter. After realizing what he said [because he was cooking hot sausage] he couldn't help but laugh and reply with a very meek follow up of no I meant Sandwhich. In the throws of  making sandwiches a few weeks back we were discussing the George Foreman grill which I subsequently threw out because I hated it. Although perfect for the grilled cheese it was useless and too difficult to clean when cooking anything else. This lead to a discussion of Panini's and we were on Amazon.com in a flash ordering a Panini press. BAM! just like that it was ordered.

Upon arrival of this beauty we have been making sandwhiches quite often. Most importantly the REUBEN SANDWICH. And allow me to say that using Gruyere vs. Swiss is so much better. Nothing comforts the soul better than a salty sandwich with extra thousand island dressing. The extra is for dipping chips! But I digress, in my funk and slump last night Geoff completely catered to the needs of his emotional wife. He proceeded to make the following mini Panini's for my snacking and whining pleasure.

mini Sausage - Mushroom - Green Pepper and Jalapeno cheese
mini Prosciutto with Brie
mini Prosciutto with Brie and Mushrooms [the best one!!!]

We chatted the evening away listening to Chickenfoot because I needed something with a little edge to it. And in the end I felt much better.

Thank you Geoff for taking care of me and just loving me no matter how many pairs of cranky pants I have on.
